How about a food challenge?
I am trying to be ultra-thrifty with food, not sacrificing quality, taste or my pocketbook.
Does anyone feel up to sharing creativity?
The situation:
- you have 45 minutes until your soup is done bubbling on the stove.
- you want to make something bread-like to go with dinner
- you don’t have butter
you do have:
- flour(wheat but tastes and cooks like white)
- cornmeal
- lots of eggs
- regular baking stuff…salt, baking powder etc
- raw honey
- cranberry sauce
- oranges
- milk
- olive oil, palm oil, and coconut oil
What would YOU attempt to make to go with your soup that would make your family feel warm and fuzzy inside? hmm?
Sounds like you could make cornbread! I’d substitute the palm oil/coconut oil for the butter (maybe a combination), use the honey as the sweetener. The cranberry sauce and oranges could be mixed together and served on top…. that’s one way to handle it anyway.

I think I’d make two things, cornbread and a cranberry/orange warm compote. I could adapt this recipe – http://allrecipes.com/Recipe/Favorite-Corn-Bread/Detail.aspx – to use honey. Then I’d peel and dice up the orange and simmer it with cranberries and maybe some spices to pour over the bread.

I like this idea, particularly since I am in use-up mode right now, where I want to shrink my pantry down to what I really need by using up all those weirdo items I have been hauling around the Known Universe for the last couple of years.
Also, I think it’s more eco-friendly to learn to be more creative with cooking; my dd’s godfather calls it “food art” – we can save on trips to the store if we learn to be more creative with what’s on hand and with seasonal produce.
